Chickpea, heirloom tomato & avocado salad

Chickpeas are high in protein, vitamins and minerals and are a healthy vegetarian staple but they don’t always agree with me, and many others too. A little tip is to cook them until they are really soft and with a strip or two of kombu seaweed. Kombu helps tenderise the skins which are a big part of the indigestibility.

Goji berry bliss balls

I’m doing my best to eat more goji berries after I discovered how good they are for you. Unique among fruits because they contain all essential amino acids, goji berries pack the highest concentration of protein of any fruit. They are loaded with vitamin C, contain more carotenoids than any other food, they have 21 trace minerals, and are high in fibre.

Amazingly they contain 15 times the amount of iron found in spinach, as well as calcium, zinc, selenium and many other important trace minerals. There is no doubt that goji berries are a nutritional powerhouse. This amazing little superfruit also contains natural anti-inflammatory, anti-bacterial and anti-fungal compounds.

Their powerful antioxidant properties and polysaccharides help to boost the immune system. It’s no wonder then, that in traditional Chinese medicine they are renowned for increasing strength and longevity.

Pumpkin miso noodles

Miso and pumpkin are the best winter combination to warm your kidneys and bones. A Japanese word that means ‘fermented beans’, miso usually has a firm paste-like texture. It is often fermented for 1–3 years, creating naturally occurring ‘live’ moulds that are good for you. The colour and types of miso refer to their ‘age’ and what grains are added to them. Explore them all, they all have very unique flavours and can really change this dish.

This is one of those simple meals that is delicious as well as good for you, and it only takes 20 minutes to prepare and cook!
