Goji berry bliss balls

Ingredients

  • 2 cups almonds
  • 1 vanilla pod or 1 tsp vanilla powder
  • 1 cup dried apricots
  • ½ cup sultanas
  • ½ cup goji berries
  • ¼ cup raw agave syrup or coconut nectar
  • ¼ cup coconut oil
  • ½ cup desiccated coconut
  • 1 tbs lucuma powder
  • 1 tbs mesquite powder
  • ¼ cup hemp seeds
  • Pinch good salt

Process almonds and vanilla pod in a food processor until finely ground. I like to leave a little texture with the almonds but see how you like it. Add apricots, sultanas and half the goji berries and process until roughly chopped. Add the agave syrup and coconut oil next and blend until combined. The mixture should start to really bind now. Add remaining ingredients and pulse for 5 seconds.

Remove the mix from food processor and roll into balls the size of a small lime. Chill for 2 hours in the fridge or overnight for best chewy results.

*Hemp seeds are still illegal to consume in New Zealand and Australia. It is legal to consume them in the US, Europe and most other Western countries.
